Make the dough.
1. Combine (3) teaspoons of salt, (4.5) teaspoons of instant yeast (or 2 packets), (3) tablespoons of sugar, (1/4) cup of oil, (2) cups of very warm water, and (2) cups of flour. Mix with a paddle attachment.
2. Change to the dough hook attachment.
3. Add 4-5 more cups of flour, mixing until dough makes a ball and is still slightly sticky to the touch.
4. Wet hands, form into a ball, sprinkle with flour. Let rise for 30-60 minutes.
Make the filling.
1. Mix (1/2) cup melted butter (1 stick), (1/2) cup granulated sugar, (1/2) cup firmly packed brown sugar, and (1 1/2) tab tablespoons ground cinnamon.
Make the rolls.
1. Separate the dough into halves.
2. Roll out into a rectangle. You'll want it to be fairly thin, about 1/4" thick. This dough rises at least double its size.
3. Use half of the filling and spread it out on top of the rectangle.
4. Roll the dough to create a log.
5. Slice the log using a sharp knife, about 1/2" thick.
6. Repeat with the other half.
7. Lay the cinnamon rolls onto a sheet and let rise for about 30 minutes.
8. Bake a 350 degrees for 15-20 minutes
Make the icing
1. Melt (2) tablespoons of butter.
2. Combine (2) cups of powdered sugar, (2) teaspoons of vanilla and (4) tablespoons of milk.
3. Blend until smooth and pour over warm rolls.
