Is Happy Grain flour a 1:1 substitute for regular all-purpose flour?
Yes!
Happy Grain was formulated to work as a direct replacement for the all-purpose flour you already use. Simply substitute it cup-for-cup in your favorite recipes, such as cookies, pancakes, muffins, pizza dough, breads, and more.
Our test bakers found that it works without changes in 94% of the recipes they tried!
Will my baked goods taste different?
You'll notice a richer, more flavorful taste, but not in a "healthy food" way.
Many people describe baked goods made with Happy Grain as more flavorful than those made with conventional white flour.
Will this make my baking dense?
No. Happy Grain was designed to perform like the all-purpose flour you already know and love.
You should be able to make your favorite family recipes without changing techniques or ingredients.

What makes Happy Grain different?
What makes Happy Grain different from regular flour?
Most modern white flour removes the bran and germ, the parts of the grain that contain much of its fiber, vitamins, minerals, and natural oils. Happy Grain is powered by whole kernel ancient grains to bring more real-food nutrition back into everyday baking.
What ancient grains are in Happy Grain?
Our flour includes whole kernel:
- Spelt
- Einkorn
- Khorasan
- Sorghum
- Teff
- Hulled Barley
These grains are stone milled and blended with organic hard red wheat flour to create a versatile all-purpose flour.
Is Happy Grain whole wheat flour?
No. Happy Grain is an all-purpose flour blend. It isn't 100% whole wheat flour. Instead, we combine seven different grains to create a flour that bakes like white flour while delivering more nutrition.
Why don't you enrich your flour?
Many conventional flours remove naturally occurring nutrients during processing and then add a small number of synthetic nutrients back later. We take a different approach: we simply keep more of the grain's natural goodness in the flour to begin with.
Freshness and storage
Why do you recommend storing Happy Grain in the freezer?
Happy Grain contains natural whole grain oils from the ancient grains we include. Those oils contribute flavor and nutrition, but they also mean the flour stays freshest when kept cold.
We recommend storing your flour in the freezer for maximum freshness.
Can I store it in my pantry?
You can, but because Happy Grain contains natural whole grain oils, we recommend using it within about 3 weeks if stored at room temperature. Refrigeration or freezing significantly extends freshness.
Does freezing hurt the flour?
Not at all. Freezing is the best way to preserve freshness, flavor, and nutrition.
Does frozen flour have to be thawed?
You do not have to thaw frozen flour, as it remains powdery and can be measured and used directly out of the freezer.
Most bakers recommend letting it sit at room temperature for 15 to 20 minutes before mixing dough to avoid affecting yeast fermentation, but you don't have to do this.

Is Happy Grain organic?
All our ingredients are 100% certified organic from US-based farms.
Due to government regulations, even though we are using 100% certified organic ingredients, our company has to also go through organic certification. We're currently working on this and anticipate getting certified in late 2026.
Is Happy Grain non-GMO?
Yes. Happy Grain is made without genetically modified ingredients.

Is Happy Grain bleached?
No. Happy Grain is never bleached or treated.
We embrace the natural flecks of brown and cream color the flour was meant to be!
Does Happy Grain contain additives, conditioners, or preservatives?
No. We don't use bleaching agents, bromate, preservatives, or unnecessary additives. Our ingredient list is simple and straightforward.
We literally take what nature puts in our ancient grains and leave it as-is. This is so important to us!
Is Happy Grain gluten-free?
No. Happy Grain contains wheat, including ancient varieties of wheat, and is not suitable for people with celiac disease or wheat allergies.
People who are gluten sensitive have an easier time digesting our flour, but it's not gluten-free.
Is Happy Grain safe to eat raw?
No. Like all flour, Happy Grain is not ready-to-eat and should be thoroughly cooked before consumption. Avoid eating raw dough or batter.
