HOW IT WORKS

Classic is a true all-purpose flour, working in cookies, pancakes, muffins, sandwich bread, pizza dough, and most family recipes exactly as written.

Our test bakers found it works in 94% of their recipes with no changes. (It's true! We tested it!)

It gives you a lot of the benefits of fresh-milled flour without the learning curve and recipe changes that often come with it.

WHY STONE-MILLED

Every grain in our Classic blend is slowly cool ground on Danish millstones.

This prevents the grain from overheating, retaining more of the naturally-occuring nutrients, especially B and E vitamins, which are most often destroyed by modern mills.

How is Happy Grain flour different than white flour?

Shockingly, the white flour you get at the grocery store is a highly processed food.

Over 40 nutrients are removed during the roller mill process to make it shelf-stable, bleaching agents are sprayed to make it artificially white, and chemicals added to "pre-condition" your dough. Then, a measly 5 synthetic vitamins and minerals are added back in.

We pack our flour with all the parts of our ancient grains, leaving all the naturally-occurring vitamins and minerals. We don't bleach, leaving flour's natural color, or add anything!

Do I have to own a grain mill?

Nope! We do all the milling for you at our facility in Dublin, Texas (a tiny town of 4,000 people).

We fresh mill in small batches, making healthier flour easy. It's ready to use as soon as it's delivered.

Is this a whole grain flour?

No. Happy Grain is designed to work like all-purpose flour, not whole wheat flour.

Think of it as a bridge between conventional white flour and whole wheat flour, without the dense texture or recipe adjustments often associated with whole wheat or home-milled flour.

What are ancient grains?

Ancient grains are grains that have remained largely unchanged for thousands of years.

Happy Grain flour includes six ancient grains:

These grains have been nourishing people around the world for centuries and naturally contain a variety of vitamins, minerals, fiber, and protein. We blend them together to create a flour that's both nutritious and versatile for everyday baking.

Are the grains organic?

Yes. Every grain we purchase is certified organic from US farms.

Happy Grain’s own processing facility is currently completing organic certification, so we are not yet marketing the finished flour as certified organic.

How long does it last?

Because the complete grains remain in the flour, Classic is best stored in the freezer in its resealable bag or another airtight container. Freezer storage helps preserve its freshness and flavor.

You can measure it directly from the freezer for most recipes. For yeast breads, remember that very cold flour may slow fermentation.

Storage recommendation:

  • Freezer: Best used within 6 months
  • Refrigerator: Best used within 3 months
  • Room temperature: Best used within 3 weeks
